Carrissa - I see that you did not add your label to this post - which sadly means you don't get credit for posting. It's not too late, you can still add it Sunday night for midterm grades (or later for final grade).
You have offered 3 very different covers, good! Here are some thoughts:
Cover A - very dark, strange color palette with odd colored circles holding awkwardly positioned type. The strength of this cover is in the rhythmic position of elements within the image.... but it isn't enough for me to recommend you go forward with this design.
Cover B - Good image, and clever subtle modules of lighter image that dance in a grid over the cover. Quite interesting. If you can solve some readability issues here (color change is needed for taglines) this could be a successful design.
I would also recommend making sure the theme title doesn't compete with the masthead... maybe it could be smaller but be colored differently?
Please design a color palette for this cover that allows contrast with the image, gives some energy to the design, and makes the cover appear very contemporary... after all, it's only an image of wheat growing - so what you do with your added elements is very important.
Drop the page #s, and reconsider the placement of the taglines. Why are they hugging the edges of the page? Where else could they be placed?
Cover C - this could be interesting, and content driven, if you added some of the foods they are recommending we'll be eating someday to the group of flying foods here. The image has a pretty "blah" background color... can you introduce some texture and/or other colors to it?
The masthead font is interesting and slightly different (as we see in the bowls of the "As". If you are moving forward with this cover I would recommend you style the theme title in a way that looks quite different than the article taglines... because they are all differently styled it "reads" like it is just one of 3 article titles. And rethink its position on the page possibly.
